Salmon-Dijon Burgers

This recipe is a great way to change up the way you eat salmon. I love love love to eat salmon, but I always end up grilling or pan frying it the same way (which gets boring). These burgers are so moist and juicy and the simplicity of the ingredients used really allows you to enjoy that salmon taste. Hope you enjoy!
Serving Size: 4 Salmon Burgers

Ingredients:

  • 2 lbs salmon, skin removed
  • 1 Egg
  • 1 TBSP Dijon mustard
  • 1/2 onion
  • 1/2 panko bread crumbs (or regular bread crumbs)
  • 2 TBSP olive oil
  • salt
  • pepper
  • 4 brioche buns (or your choice of sandwich bun)

Toppings

  • tomatoes, thinly sliced
  • onion, thinly sliced
  • lettuce leaves
  • Dijon mustard

Directions:

  1. Place the salmon, egg, mustard, onion, and 1/2 teaspoon salt into a food processor and pulse until well combined (and salmon pieces are finely chopped). Stir in 1/2 cup bread crumbs into the mixture until well combined. If needed, add an extra 1/4 cup. (There should be just enough bread crumbs in the mixture for you to be able to form patties. Too much bread crumbs will dry out your salmon patties). Form the mixture into four patties and place in the refrigerator.
  2. When you are ready to eat, heat grill or stove to medium heat.
  3. Place the patties on grill; cook 4 to 5 minutes per side. (On a stovetop, heat the oil in a grill pan over medium heat and cook patties 5 minutes per side.)
  4. Serve the patties on the brioche buns and top with tomatoes, onion, lettuce, and dijon mustard.
