Edamame Salad

Servings: 4 Salads
  • 2 heads lettuce
  • 2 carrots, shredded
  • 1 cup shelled edamame
  • 3 green onions, cut into 1/8″ slices
  • 1/2 head small red cabbage, shredded
  • Wonton crisps (optional)
  • Almonds (optional)
  • Sesame-ginger dressing
  1. Combine the lettuce, carrots, edamame, and green onions in a large bowl.
  2. Serve the salad with the wonton crisps (omit if gluten-free), almonds, and dressing on the side.
