Carrot Zucchini Yogurt Bread

Servings: 12 Muffins or 1 Loaf

Ingredients:
  • 1 2/3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup dark brown sugar, packed
  • 1/2 cup sugar
  • 2 eggs
  • 2 bananas, mashed
  • 1 cup grated zucchini (1 medium zucchini)
  • 1 cup grated carrots
  • 3/4 cup plain Greek yogurt (I used 2% Fage)
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
Directions:
  1. Preheat oven to 350 F.
  2. Butter a 9″ x 5″ loaf pan, then dust with flour.
  3. In a medium bowl, stir together flour, baking soda, cinnamon, and salt.
  4. In a separate mixing bowl, whisk together sugars and eggs. Add coconut oil, mashed bananas,grated zucchini, grated carrots, Greek yogurt, and vanilla. Mix to combine.
  5. Fold in flour mixture.
  6. Add walnuts and raisins.
  7. Pour into prepared loaf pan and bake for an hour, or until a toothpick inserted into the bread comes out clean.
  8. Once the loaf has cooled, store in an air-tight container and refrigerate.
