Aunty Christy’s Lilikoi (Passion Fruit) Pound Cake

Lilikoi Cake
  • 1 cup butter (room temperature)
  • 2 cups  sugar
  • 4 eggs
  • 4 Tbsp orange zest
  • 1 tsp vanilaa
  • 3 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup fresh lilikoi juice
  • 3/4 cup buttermilk


  • 1/2 cup sugar
  • 1/2 cup fresh lilikoi juice
  1. Preheat oven to 350 degrees
  2. Generously grease and flour a 10″ bundt pan  (or 12 mini loaves.
  3. Using an electric mixer, cream butter and sugar together until light and fluffy.  Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, mix together flour, baking power, baking soda, and salt.
  5. In another small bowl, mix together the 1/2 cup lilikoi juice and buttermilk.
  6. Add flour mixture and buttermilk mixture alternatively to butter mixture, beginning and ending with flour.
  7. Pour batter into prepared pan(s).  Bake for 45-55 minutes or until toothpick comes out clean.  Remove from oven and cool in pan for 15 minutes. Invert cake onto cake plate.
  8. To make glaze, combine 1/2 cup sugar and 1/2 cup lilikoi juice. With a toothpick, gently poke holes in the cake. Drizzle glaze over cooled cake.
