Slow Cooker Jambalaya

Slow cookers are MY JAM. Correction…they should be everyone’s jam. Pop it in the slow-cooker and that’s it! But even better yet, this JAMbalaya (haha see what I did there) has chicken and sausage, veggies and rice, which means it  doesn’t even need a side dish. YAY more time for….well doing just about anything else. Enjoy!


Serving Size: 6

  • 2lb chicken thighs (cut into pieces)
  • 1lb smoked sausage (cut into 2in slices)
  • 1T paprika
  • 1 T garlic salt
  • 1.5 tsp black pepper
  • 1.5 tsp onion powder
  • 1/2 tsp cayenne
  • 1.5 tsp dried oregano
  • 1.5 tsp thyme
  • 2 tsp chopped garlic
  • 1 can chopped tomatoes (with juices)
  • 2 cans chicken broth
  • 1 cup water
  • 1 green bell pepper, chopped
  • 1.5 C long grain rice
  1. Combine chicken, sausage, onion, green pepper, tomatoes, garlic, chicken broth, spice mix, thyme and oregano in a large (5-quart) slow cooker. Cook on low for 4 hours.
  2. Add bell pepper and rice; raise heat to high and cook for 45 minutes more.
  3. Enjoy!
